Study Guide

There are many ways that you might choose to make your way through the unit. The diagram and suggested sessions (below) will help to plan your learning through the Use Hygienic Practices for Food Safety unit. The sessions outlined below are a suggestion only - you may have another way that you prefer to study.


Session 1 - Follow Hygiene Procedures and Reporting Health Issues - Pink & Aqua tiles

This includes:
  • Hygiene procedures.
  • Unsafe practices.
  • Food hazards.
  • Removing or minimising hazards through reporting.
  • Reporting health issues.
  • Reporting incidents of food contamination and avoiding activities where a health issue could cause contaimination.
A few points to think about for your blog:

Why is it important to follow hygiene procedures as well as promptly reporting any unsafe practices and/or food hazards? How can reporting these things remove or minimise the hygiene hazard?

What are some examples of personal health issues that must be reported and why should they be reported?

Session 2 - Preventing Cross Contamination - Yellow & Red tiles

This includes:
  • Maintaining clean uniforms and wearing personal protective clothing.
  • Preventing food contamination.
  • Preventing unnecessary direct contact with ready to eat food.
  • Avoiding unhygienic personal contact with food or food contact surfaces.
  • Avoiding unhygienic cleaning practices.
  • Importance of hand washing and using the appropriate facilities for hand washing.
A few points to think about for your blog:

Discuss the implications of unhygienic personal contact and unhygienic cleaning practices in the work place.

Explain the reasons behind following hand washing procedures consistently in the work place and the problems you would face if the work place failed to have appropriate hand washing facilities.
